INFORMED MANAGER THAT PASTEURIZED EGGS MUST BE SUBSTITUTED FOR RAW EGGS IN THE PREPARATION OF FOODS SUCH AS HOLLANDAISE, MAYONNAISE, CAESAR DRESSING, ETC. INSTRUCTED MANAGER TO USE PASTEURIZED EGGS AS A SUBSTITUTE IN WHENEVER PREPARING SAUCES THAT DO DON'T HAVE PASTEURIZED/HEAT PROCESS. PRIORITY VIOLATION # 7-38-005 NO CITATION ISSUED.
