POTENTIALLY HAZARDOUS FOOD MEETS TEMPERATURE REQUIREMENT DURING STORAGE, PREPARATION DISPLAY AND SERVICE - Comments: Found the following potentially hazardous foods at improper temperatures: 12lbs of blackened chicken in the prepared food walkin cooler @ 47.5F, valued at $154; 6lbs of fish in the steam table in customer self service area @ 127.0F, valued @ $120. Must keep all potentially hazardous foods at proper temperatures of 40F or less for cold foods, and 140F or higher for hot foods. Operator voluntarily discarded denatured foods during inspection. Critical violation 7-38-005(a).
