INSECTS, RODENTS, & ANIMALS NOT PRESENT - Comments: OBSERVED APPROXIMATELY 60 SMALL BLACK LIVE FLIES IN THE REAR DRY STORAGE AREA, FLYING THROUGHOUT IN-USE PREP AREAS ON TOP OF SURFACES OF 3 COMPARTMENT SINK AND EMPLOYEE TOILET ROOM. INSTRUCTED TO CONTACT PEST CONTROL FOR SERVICE. MUST ELIMINATE FLY ACTIVITY. PRIORITY FOUNDATION VIOLATION. #7-38-020 (A). CITATION ISSUED.

WIPING CLOTHS: PROPERLY USED & STORED - Comments: OBSERVED STACKED SOILED TOWELS IMPROPERLY AIR DRYING STORED IN TOILET ROOM. INSTRUCTED TO REMOVE TO PREVENT PEST HARBORAGE IN SAID SPACE.

Contaminated cloths spread bacteria across multiple surfaces.

Wiping cloths must be properly sanitized and stored.

Store in sanitizer between uses (200ppm quat or 50-100ppm chlorine); Separate cloths for food and non-food surfaces; Test sanitizer concentration.

TOILET FACILITIES: PROPERLY CONSTRUCTED, SUPPLIED, & CLEANED - Comments: OBSERVED ALL PLUMBING FIXTURES IN NEED OF CLEANING. INSTRUCTED TO PROVIDE AND MAINTAIN.
