Must repair and provide a non-porous, smooth, easily cleanable surface. Observed floor in front prep area under the equipment was encrusted with a thick layer of food debris. Observed floor in rear prep area had accumulated debris along the wall bases and under equipment. Floor under three compartment sink in rear prep has a large accumulation of grease and food debris. Must remove debris, clean, and maintain affected areas.
