HANDS WASHED AND CLEANED, GOOD HYGIENIC PRACTICES; NO BARE HAND CONTACT WITH READY-TO-EAT FOODS. - Comments: Observed an employee with gloves on mopping the floor. Employee then put mop back and went to handle the fryer baskets in the prep area without washing hands and changing gloves after being instructed three separate times (by sanitarian and managers). Instructed facility that hands must be properly washed at all possible points of contamination including when gloves must be changed. Employee complied at time of inspection. Critical violation 7-38-010(a).
Why This Matters
Hands are #1 vehicle for pathogen transfer. Bare hand contact with ready-to-eat foods causes majority of foodborne outbreaks.

Proper handwashing and no bare hand contact with ready-to-eat foods.
Specific Requirements
