Found 36 dozen of eggs being stored on wooden display shelf next to cooler at 48.3 F to 55.4 F. Owner stated that eggs were delivered yesterday. Instructed that all potentially hazardous foods must maintain 40 F or below. Manager voluntarily denatured and discarded. Value $49, 81 lbs. Critical citation issued 7-38-005(A).
