PROPER COLD HOLDING TEMPERATURES - Comments: FOUND THE FOLLOWING TCS FOODS HELD AT IMPROPER TEMPERATURE INSIDE DELI DISPLAY CASE- SWISS CHEESE AT 49.0 F, MUENSTER CHEESE AT 49.1 F, COLBY CHEESE AT 49.2 F, AMERICAN CHEESE AT 49.2 F AND CHEDDER CHEESE AT 49.2 F. HOWEVER FOUND SAID DELI DISPLAY COOLER AMBIENT AIR TEMPERATURE AT 41.0 F WHEN COOLER FANS WERE NO LONGER COVERED BY PAPER. INSTRUCTED MANAGER TCS FOODS MUST BE HELD AT 41.0 F OR BELOW IF HELD COLD. ALL OUT OF TEMPERATURE TCS FOODS VOLUNTARILLY DISCARDED AT THIS TIME. PRIORITY VIOLATION 7-38-005.
