Must keep at refrigeration at 40F or less at all times. Cooler has been emptied, tagged and held for inspection. Must not use cooler until temperature restored to 40F or less, and tag has been removed by City of Chicago. Critical violation 7-38-005(a)

Valid City of Chicago Food Service Sanitation Certificate required and must be posted.

POTENTIALLY HAZARDOUS FOOD MEETS TEMPERATURE REQUIREMENT DURING STORAGE, PREPARATION DISPLAY AND SERVICE - Comments: Observed the following potentially hazardous foods at improper temperatures in the display case coolers ranging in temperatures from 51.8F -55.4F: milk, raw eggs, french onion dip, deli meats (beef, turkey, bologna, etc.) and beef sausage. All potentially hazardous foods must be held at 40F or less or 140F or higher. Operator voluntarily discarded approximately 50 lbs of denatured foods, valued at $50. Critical violation 7-38-005(a).
Ill food workers cause 70% of foodborne outbreaks. Proper reporting prevents transmission of Norovirus, Hepatitis A, Salmonella, and other serious diseases.
All food employees must understand and follow health reporting requirements and food safety responsibilities.
Employees must: Report illness symptoms and exposures; Be excluded/restricted when ill; Understand their role in preventing foodborne illness; Follow proper hygiene practices; Have signed health policy on file.
