ALSO, OBSERVED PLATE OF CHICKEN BEING REHEATED IN THE MICROWAVE TO BE SERVED TO CUSTOMER AT 132.8F. INSTRUCTED ALL FOOD ITEMS MUST BE REHEATED TO A PROPER TEMEPRATURE OF 165F AND THEN PUT ON A HOT HOLDING UNIT TO MAINTAIN A TEMPERATURE OF 135.0F OR ABOVE. HOT HOLDING UNITS SHOULD NOT BE USED TO RAPIDLY REHEAT TCS FOODS. THE PLATE FOR THE CUSTOMER WAS DISCARDED. ALL THE FOOD ITEMS WERE RETURNED ON THE STOVE TO BE PROPERLY REHEATED.
