Found 2nd floor prep area 4-door cooler not maintained, ambient air temperature at 45.5 F. Instructed manager to repair and maintain cooler. Citation issued. Ticket #H000058027 15.

POTENTIALLY HAZARDOUS FOOD MEETS TEMPERATURE REQUIREMENT DURING STORAGE, PREPARATION DISPLAY AND SERVICE - Comments: All cold food shall be stored at a temperature of 40F or less. Found potentially hazardous foods held at improper tempertures between 45.5 F and 50 F- Tuna, Egg Salad, Ham, Cheese, etc. Instructed manager all potentially hazardous foods must be held at 40 F or below if held cold. Manager voluntarily discarded all out of temperature foods at this time. Citation issued.
