POTENTIALLY HAZARDOUS FOOD MEETS TEMPERATURE REQUIREMENT DURING STORAGE, PREPARATION DISPLAY AND SERVICE - Comments: OBSERVED DIFFERENT CUTS OF CHICKEN STORED AT IMPROPER TEMPERATURE IN THE WALK IN COOLER. NOTED CHICKEN STRIPS AT 88-100 DEGREES F, CHICKEN WINGS AT 58-71 DEGREES F, AND CHICKEN DRUMSTICKS AT 56 DEGREES F. OBSERVED LARGE PLASTIC CANS (APPROX. 50 GALLON SIZE) BEING USED TO IMPROPERLY COOL CHICKEN WINGS. ALSO NOTED BUS TUBS OF CHICKEN TENDERS IMPROPERLY COOLING, COVERED IN PLASTIC WRAP WHILE STILL HOT, AND STACKED CONTAINERS ON TOP OF ONE ANOTHER. INSTRUCTED THAT ALL COLD POTENTIALLY HAZARDOUS FOODS MUST BE HELD AT 40 DEGREES F OR BELOW. OPERATOR VOLUNTARILY DISCARDED 460 LBS OF PRODUCT WORTH $800. CRITICAL VIOLATION: 7-38-005(A)
