CUTTING BOARDS, FOOD HANDLERS, UTENSILS, ETC - Comments: All food shall be protected from contamination and the elements, and so shall all food equipment, containers, utensils, food contact surfaces and devices, and vehicles. OBSERVED BLACK SLIMEY SUBSTANCE/MOLD IN THE INTERIOR OF ICE MACHINE DRIPPING ON TO THE ICE. ICE NOT PROTECTED FROM CONTAMINATION. INSTRUCTED OWNER MUST DISCARD ICE, CLEAN AND SANITIZE ICE MACHINE. HELD FOR INSPECTION TAG PLACED ON UNIT. WHEN READY TO FAX LETTER REQUESTING TAG REMOVAL. CRITICAL CITATION ISSUED, 7-38-005(A).
