FOOD-CONTACT SURFACES: CLEANED & SANITIZED - Comments: OBSERVED DISHES AND UTENSILS NOT BEING ADEQUATELY SANITIZED AFTER BEING WASHED AND RINSED AT THE 3 COMPARTMENT SINK. OBSERVED A FOOD HANDLING EMPLOYEE WASH AND RINSE MULTIPLE DISHES AND UTENSILS AND THEN DIP THEM IN THE QUAT SANITIZER FOR APPROX. ONE SECOND BEFORE LAYING THEM DOWN TO DRY ON THE DRAINBOARD. THE CONTAINER OF QUAT SANITIZER STATES THAT ALL UTENSILS MUST BE SUBMERGED IN THE SANITIZER FOR AT LEAST 60 SECONDS. PRIORITY VIOLATION 7-38-025. CITATION ISSUED.
