All equipment and utensils must be clean and properly maintained.

Equipment clean to sight and touch; Free of food debris and grease; Maintained in good repair; Stored properly when clean.

FLOORS: CONSTRUCTED PER CODE, CLEANED, GOOD REPAIR, COVING INSTALLED, DUST-LESS CLEANING METHODS USED - Comments: Floors in kitchen prep area had gaps by ovens, kitchen storage shelving, shall be repaired/sealed. Floors that had peeling paint/ exposed concrete in storage, and mechanical rooms, shall be repaired/sealed.

Damaged floors harbor bacteria and create safety hazards.

Floors must be smooth, cleanable, and maintained.

Smooth, non-porous in food areas; Properly sloped to drains; Coving at wall junctures; Kept clean; Good repair.

WALLS, CEILINGS, ATTACHED EQUIPMENT CONSTRUCTED PER CODE: GOOD REPAIR, SURFACES CLEAN AND DUST-LESS CLEANING METHODS - Comments: Walls in kitchen storage room that had peeling paint, shall be repaired/sealed. Wall in kitchen storage room not cleant had food splattering, shall be cleaned. Walls, ceiling in classrooms in old building that had peeling paint/exposed plaster, shall be repaired/sealed. Damaged/stained, missing ceiling tiles in 3rd floor, and 2nd floor classroom, hallway in new building, shall be repaired/replaced. Bathroom walls in old building, staff bathroom, shall be repaired/sealed.

Damaged surfaces cannot be properly cleaned and may harbor pests.

LIGHTING: REQUIRED MINIMUM FOOT-CANDLES OF LIGHT PROVIDED, FIXTURES SHIELDED - Comments: Burned out light bulb in walk in cooler in kitchen prep area, shall be provided. Broken/damaged light shields in old building classrooms, hallways, shall be replaced.
