Observed 1/2 of a full pan of Tuna at 53.0 F on ice holding unit next to steam table at improper temperature. Instructed to keep cold and hot foods separated during service and cold foods should maintain 40 F or below. Manager voluntarily discarded and denatured. 5lbs, value $12.00.
