POTENTIALLY HAZARDOUS FOOD MEETS TEMPERATURE REQUIREMENT DURING STORAGE, PREPARATION DISPLAY AND SERVICE - Comments: Potentially hazardous foods does not meet temperature requirement during storage, display and service. Found ready-to-eat Tamales on display in warmer unit at Pork 103.0F, Chicken at 105.3F, Bean at 117.7F and vegetarian at 119.0F. Instructed that all potentially hazardous foods must maintain 140F or above at all times. Manager voluntarily discarded and denatured-approximately 54lbs, value $108. Critical citation issued 7-38-005(A).
