HAND WASHING FACILITIES: WITH SOAP AND SANITARY HAND DRYING DEVICES, CONVENIENT AND ACCESSIBLE TO FOOD PREP AREA - Comments: Found no paper towels at the rooftop/uproom bar hand sink and found the 1st floor cafe dish area hand sink to be blocked by a large trash can. Instructed facility to maintain all hand sinks accessible at all times with soap, paper towels, and hot and cold running water. Facility removed trash can and installed paper towels at time of inspection. Critical violation 7-38-030.
Missing supplies prevent proper handwashing, forcing inadequate cleaning that spreads pathogens.
All handwashing sinks must have soap and hand drying provisions.
Soap in dispensers at each sink; Paper towels in dispensers or air dryers; Supplies maintained during all hours; Waste receptacles if paper towels used.

Instructed facility to store or present in a manner so as to protect utensils from possible contamination and to maintain. Observed small neck/opening bottles used for syrups and juices on site. Instructed facility to maintain a bottle brush on site to properly clean said bottles which must be done in a three compartment sink.
