INSTRUCTED THE PERSON IN CHARGE TO ENSURE THAT FOOD HANDLING EMPLOYEES ARE NOT WEARING JEWELRY EXCEPT A PLAIN RING, SUCH AS A WEDDING BAND WHILE PREPARING FOOD AND MAINTAIN IT.

Clean outer clothing; Hair restraints; Short, clean fingernails; No jewelry except plain ring; Clean hands and arms.

FOOD & NON-FOOD CONTACT SURFACES CLEANABLE, PROPERLY DESIGNED, CONSTRUCTED & USED - Comments: OBSERVED MILK CRATES BEING USED FOR ELEVATION IN THE REAR PREP, DISHWASHING AREA, AND DRY STORAGE AREAS. INSTRUCTED THE PERSON IN CHARGE NOT TO USE MILK CRATES FOR ELEVATION TO PREVENT HIDING PLACES FOR PEST. MUST PROVIDES APPROPRIATE SHELVING FOR STORAGE. ALL FOOD ITEMS MUST ALSO BE STORED 6" AWAY FROM THE WALL.

PLUMBING INSTALLED; PROPER BACKFLOW DEVICES - Comments: OBSERVED DRAINPIPE LEAKING UNDER THREE COMPARTMENT SINK IN THE REAR WAREWASHING AREA ---ALSO OBSERVED EXPOSED HANDSINK ADJACENT TO THREE COMPARTMENT SINK SLOW DRAINING. INSTRUCTED THE PERSON IN CHARGE TO REPAIR THE LEAKING DRAINPIPE AND TO REPAIR IT SO THAT THE SINKS DRAIN PROPERLY AND MAINTAIN.
