FOOD PROTECTED DURING STORAGE, PREPARATION, DISPLAY, SERVICE AND TRANSPORTATION - Comments: Upon reinspection noticed ice machine still shut off and not in use. Facility stated they are waiting on a technician to service machine. Facility minimized violation by cleaning most effected areas but still some black, mold-like accumulation exists. Tagged ice machine held for inspection by CDPH and instructed to maintain out of use until fully cleaned and sanitized and UNTIL CDPH REMOVES TAG. Serious violation 7-38-005(a).
Dirty equipment harbors and spreads pathogens, causing cross-contamination and illness.
All food contact surfaces must be properly cleaned and sanitized.
Wash, rinse, sanitize after each use; Clean between different raw foods; Every 4 hours for continuous use; When contaminated; Proper procedures and chemicals.
