OBSERVED COLD HOLDING UNIT CONTAINER FOR CHICKEN WAS OVER-FILLED AND TOP CONTAINERS OF CHICKEN IN 3 DIFFERENT CONTAINERS WERE NOT HOLDING THE PROPER TEMPERATURE OF 40F OR BELOW, AT THE TIME OF INSPECTION 12OZ. OF CHICKEN WERE AT TEMPERATURES RANGING FROM 46.2F-50.3F. MANAGER VOLUNTEERINGLY DISCARDED AND DENATURED SAID ITEM. INSTRUCTED TO MAINTAIN A TEMPERATURE OF 40F OR BELOW AT ALL TIMES FOR ALL POTENTIALLY HAZARDOUS COLD FOODS. CRITICAL VIOLATION 7-38-005(A).
