POTENTIALLY HAZARDOUS FOOD MEETS TEMPERATURE REQUIREMENT DURING STORAGE, PREPARATION DISPLAY AND SERVICE - Comments: Found potentially hazardous foods at improper temperatures in the serving line cold holding unit: 2lbs of egg salad sandwiches at 51.8f and 1lb of roasted chicken salad (with cut greens) at 64.1f. Operator discarded and denatured said food with a value of $20. Instructed facility to maintain all potentially hazardous foods at 40f or below or 140f or above. Critical violation 7-38-005(a).

Instructed facility to maintain soap at all times at hand sinks. Facility installed at time of inspection. Critical violation 7-38-030.
Missing supplies prevent proper handwashing, forcing inadequate cleaning that spreads pathogens.
All handwashing sinks must have soap and hand drying provisions.
Soap in dispensers at each sink; Paper towels in dispensers or air dryers; Supplies maintained during all hours; Waste receptacles if paper towels used.

OUTSIDE GARBAGE WASTE GREASE AND STORAGE AREA; CLEAN, RODENT PROOF, ALL CONTAINERS COVERED - Comments: Observed the outside waste dumpsters to have open lids and garbage overflowing causing lids to not close. Instructed facility to correct and maintain so that all garbage and waste is contained inside dumpsters with tight fitting lids. Serious violation 7-38-020.
Poor waste management attracts pests and creates breeding grounds for disease vectors.
