INSTRUCTED TO REPAIR SO THAT ALL RINSE TEMPERATURES ARE ADEQUATE AND FINAL RINSE TEMPERATURE IS AT A MINIMUM OF 180F AND NOT EXCEEDING 194F. HIGH TEMPERATURE DISH MACHINE TAGGED AND HELD FOR INSPECTION BY THE CHICAGO DEPARTMENT OF PUBLIC HEALTH. INSTRUCTED FACILITY TO ONLY USE THE 3 COMPARTMENT SINK TO WASH RINSE AND SANITIZE ALL EQUIPMENT AND UTENSILS. PRIORITY VIOLATION 7-38-025. CITATION ISSUED UNDER 1006 FOOD RETAIL INSPECTION REPORT #2301188.
