DISH WASHING FACILITIES: PROPERLY DESIGNED, CONSTRUCTED, MAINTAINED, INSTALLED, LOCATED AND OPERATED - Comments: All dish washing machines must be of a type that complies with all requirements of the plumbing section of the Municipal Code of Chicago and Rules and Regulation of the Board of Health. FOUND NO 3 COMPARTMENT SINK ON PREMISES USED FOR PROPER WASH, RINSE AND SANITIZING OF MULTI-USE UTENSILS. INSTRUCTED TO INSTALL A METAL 3 COMPARTMENT SINK, EQUIPPED WITH AN ATTACHED METAL DRAINBOARD, A GREASE INTERCEPTOR (GREASE BOX) AND RUNNING HOT AND COLD WATER UNDER CITY PRESSURE. (NOTED HIGH TEMPERATURE DISH MACHINE ON PREMISE NOT WORKING (OUT OF ORDER) AT THIS TIME. INSTRUCTED TO FIX OR PROVIDE 3 COMPARTMENT SINK. NO CITATION ISSUED.
