PREVIOUS MINOR VIOLATION(S) CORRECTED 7-42-090 - Comments: The following violations were originally documented on January 5, 2011 and were given a correct by date of April 05, 2011 per inspection report # 120703. Clean and repair the water damaged kitchen cabinet where the sink is. Inspector Comments: The single basin sink in the cafeteria is inadequate to rinse utensils being sent back to Andrew Jackson School and wash hands as well, (it has an attached drinking fountain nozzle). Water is leaking into the drawers of clean utensils from said sink while utensils are washed. Install a three compartment sink with an attached drainboard to wash, rinse and sanitize items in this school in a sanitary manner. Repair the North girls toilet. The above violations still exist and must be corrected by November 16, 2011 or further action may be taken including a 48 hour notice per the area supervisor of Chicago Department of Public Health. A separate and distinct offense shall be deemed to have been committed for each Minor violation that is not corrected upon re-inspection by the health authority.
Specialized processes without proper controls can create deadly toxins like botulism.
Special processes require approved HACCP plans or variances.
Written HACCP plan for: Vacuum packaging; Sous vide; Smoking for preservation; Curing; Using additives. Plan must be approved by CDPH.
