WIPING CLOTHS: PROPERLY USED & STORED - Comments: OBSERVED WIPING TOWELS NOT PROPERLY STORED WHEN NOT IN USE. INSTRUCTED MANAGER TO STORE WIPING CLOTHS IN SANITIZING SOLUTION (MUST BE AT THE REQUIRED PPM) WHEN NOT IN USE. MAINTAIN SAME.

Wiping cloths must be properly sanitized and stored.

Store in sanitizer between uses (200ppm quat or 50-100ppm chlorine); Separate cloths for food and non-food surfaces; Test sanitizer concentration.

ALSO, BUCKLING/PEELING PAINT ON THE CEILING IN THE PREP AREA AND REAR HALLWAY. INSTRUCTED MANAGER TO REPLACE BROKEN/DAMAGED FLOOR TILES AND SCRAPE PEELING PAINT, PAINT CEILING SURFACES AND MAINTAIN SMOOTH AND EASILY CLEANABLE SURFACES.
