AT THE TIME OF THE INSPECTION, CHLORINE WAS ATTACHED TO THE DISH MACHINE HOWEVER THE CONCENTRATION LEVEL OF THE CHLORINE WAS 0PPM. INSTRUCTED TO REPAIR SO THAT THE DISH MACHINE IS SANITIZING PROPERLY AT 50 PPM- 100 PPM OF CHLORINE AT ALL TIMES FOR LOW TEMPERATURE DISH MACHINE OR 180F FOR THE FINAL RINSE FOR A HIGH TEMPERATURE DISH MACHINE. DISH MACHINE TAGGED AND HELD FOR INSPECTION AND MAY NOT BE USED. PRIORITY VIOLATION. CITATION ISSUED 7-38-025.
