Found prepared egg salad in bulk container and individual packaged containers on prep table at improper temperature. Temperature of egg salad 25 lbs at 46.5F to 45.5F. Instructed that potentially hazardous foods must maintain 40F or below at all times. Manager voluntarily discarded and denatured. Value $150.00. Critical citation issued 7-38-005(A).
