SEWAGE AND WASTE WATER DISPOSAL, NO BACK SIPHONAGE, CROSS CONNECTION AND/OR BACK FLOW - Comments: OBSERVED WASTE WATER BACKING UP FROM UNDER THE GREASE TRAP BOX WHEN I RUN THE WATER FROM THE 2 COMPARTMENT SINK,IN THE BASEMENT PREP AREA. INSTRUCTED MANAGER TO REPAIR THE GREASE TRAP BOX AND STOP THE PRODUCTION IN THE PREP AREA. CITATION ISSUED CRITICAL -7-38-030. MANAGER CALLED THE MAINTENANCE PERSON AND PLUMBER TO REPAIR THE GREASE TRAP BOX. GREASE BOX WAS REMOVED AND REPLACED WITH A NEW ONE DURING INSPECTION. NO MORE WASTE WATER BACKING UP.
