INSTRUCTED TO INSTALL A METAL 3 COMPARTMENT SINK, EQUIPPED WITH AN ATTACHED DRAINBOARD, A GREASE TRAP AND HOT AND COLD RUNNING WATER UNDER CITY PRESSURE. SINKS SHALL BE OF SUFFICIENT SIZE TO PERMIT COMPLETE IMMERSION OF THE UTENSILS TO BE WASHED, RINSED AND SANITIZED OR PROVIDE COMMERCIAL TYPE DISH MACHINE. (PREMISES HAS 3 COMPARTMENT BAR SINK IN FRONT BAR AREA FOR SMALL GLASSWARE.) AT TIME OF CONSULTATION OWNER HAS PURCHASED 3 COMPARTMENT SINK, WITH ATTACHED METAL DRAINBOARD, AND GREASETRAP. OWNER REQUESTED INFORMATION ON INSTALLING SINK IN BASEMENT. INFORMED OWNER IF SINK IS INSTALLED IN BASEMENT (WHICH HAS FINISHED WALLS, FLOOR AND CEILING) AN ADDITIONAL EXPOSED HAND SINK WILL NEED TO BE INSTALLED IN SAME UTENSIL WASHING AREA.
