MACHINE WAS BEING USED AT TIME OF INSPECTION. 105 DEGREES FOUND AFTER SEVERAL ATTEMPTS WHILE DISHES WERE BEING WASHED. INSTRUCTED MANAGER MUST NOT USE MACHINE UNTIL REPAIRED AND PROPERLY DISPENSES 120 DEGREES AT WASH CYCLE. OPERATION MUST USE 3 COMPARTMENT SINK TO WASH, CLEAN AND SANITIZE ALL DISHES. MACHINE WAS TAGGED DURING INSPECTION. OPERATION INSTRUCTED TO SERVICE MACHINE AND DO NOT USE UNTIL CORRECT TEMP LEVEL IS REACHED. MUST CONTACT THE CDPH WHEN REPAIRED, TO HAVE TAG REMOVED.
