WHEN WATER IS PUT ON ONE COMPARTMENT AND RELEASED, IT BACKS UP INTO THE OTHER COMPARTMENTS WITH DIRT AND GREASE. ALSO NOTED WASTE WATER BACKING UP FROM THE FLOOR DRAIN BY THE 3 COMPARTMENT SINK AT THE REAR PREP AREA. CRITICAL VIOLATION #7-38-030. PLUMBERS WERE CALLED AND ARRIVED TO CORRECT DURING INSPECTION.
