Bactericidal treatment shall consist of exposure of all dish and utensil surfaces to a rinse of clean water at a temperature of not less than 180F. HIGH TEMPERATURE DISHMACHINE NOT WORKING, FINAL RINSE TEMPERATURE AT 150 F. INSRUCTED MANAGER TO REPAIR DISHMACHINE, FINAL RINSE MUST BE 180 F OR ABOVE. ALL MULTI-USE UTENSILS MUST BE WASHED, RINSED AND SANITIZED IN 3-COMPARTMENT SINK. MANAGER STATES,"WILL BE USING FOAM/SINGLE SERVICE TRAYS, SPOONS, FORKS UNTIL DISHMACHINE IS REPAIRED." DISHMACHINE WAS NOT IN USE AT THIS TIME, NO CITATION ISSUED.
