POTENTIALLY HAZARDOUS FOOD MEETS TEMPERATURE REQUIREMENT DURING STORAGE, PREPARATION DISPLAY AND SERVICE - Comments: Found 60 pounds of cooked rice in the walk in cooler at temperatures ranging from 46.6f-78.7f and labeled that it was prepared on the previous day. Instructed facility that all food must be maintained at 40f or below or 140 or above and cooked food that is to be cooled down must be cooled to 70f in 2 hours and below 40f within 4 hours. Operator discarded and denatured said food, valued at $18, as stated by operator. Critical violation 7-38-005(a).
Why This Matters
Ill food workers cause 70% of foodborne outbreaks. Proper reporting prevents transmission of Norovirus, Hepatitis A, Salmonella, and other serious diseases.
