OBSERVED ABOUT 12 PREMADE PIZZA ON A RACK IN THE FOOD PREP AREA, EMPLOYEE STATES THAT THE FACILITY LEAVES THE PREMADE PIZZAS OUT FOR AN HOUR HOWEVER THE TIME CLOCK ABOVE THE PIZZAS WAS NOT STARTED AND THE EMPLOYEE COULD NOT PRODUCE A LOG BOOK OF HOW LONG SAID PREMADE PIZZAS HAD BEEN STORED AT ROOM TEMPERATURE. SAID CHEESE PIZZAS WERE AT 65F AT THE TIME OF THE INSPECTION. INSTRUCTED EMPLOYEE TO DISCARD AND DENATURE SAID TCS FOODS AND ALWAYS MAINTAIN AN ADEQUATE LOG, OR TURN ON THE CLOCK ABOVE THE PIZZA AND FOLLOW AN ADEQUATE PROCEDURE WHEN USING TIME AS A TEMPERATURE CONTROL FOR TCS FOODS. EMPLOYEE DISCARDED SAID TCS FOODS DURING THE INSPECTION. PRIORITY VIOLATION. CITATION ISSUED 7-38-005.
