SANITIZING RINSE FOR EQUIPMENT AND UTENSILS: CLEAN, PROPER TEMPERATURE, CONCENTRATION, EXPOSURE TIME - Comments: AT TIME OF INSPECTION, I OBSERVED CHEMICAL DISH MACHINE NOT PROPERLY SET UP TO SANITIZE. AT TIME OF INSPECTION, I OBSERVED THE MACHINE TO BE ALREADY TURNED ON, WITH WET UTENSIL INSIDE (EVIDENCE MACHINE HAD BEEN USED). I RAN ONE CYCLE AND THE TEST STRIP SHOWED 0 PPM CHLORINE. I OBSERVED THREE BOTTLES HOOKED INTO THE MACHINE: 1 RINSE AID AND 2 DETERGENTS (NO SANITIZER WAS OBSERVED HOOKED INTO THE MACHINE). INSTRUCTED THAT CHEMICAL DISH MACHINES MUST BE PROPERLY INSTALLED AND PROVIDE 50-100 PPM OF CHLORINE DURING THE FINAL RINSE. THE MANAGER ON SITE PROVIDED A CONTAINER OF CHLORINE SANITIZER AND HOOKED IT UP TO THE PROPER MACHINE LINE. THE MACHINE WAS THEN OBSERVED WITH TEST STRIPS TO BE PROVIDING 100 PPM OF CHLORINE DURING THE FINAL RINSE. CRITICAL VIOLATION: 7-38-030
