POTENTIALLY HAZARDOUS FOOD MEETS TEMPERATURE REQUIREMENT DURING STORAGE, PREPARATION DISPLAY AND SERVICE - Comments: Observed the following potentially hazardous foods at improper temperatures in the hot holding unit: 6lbs of corn @ 103.5F; 4lbs of rice @ 101.8F. Found the following potentially hazardous foods at improper temperatures in the cold hold unit: 15lbs of beef @ 46.4F-50.0F; and 3lbs of chicken @ 47.4F-49.5F. Instructed all potentially hazardous foods must be held at 140F or higher or 40F or less at all times. Operator voluntarily discarded denatured foods during inspection, totaling $40 in value. Critical violation 7-38-005(a).
