INFORMED PERSON IN CHARGE HOT WATER GENERATION AND DISTRIBUTION SYSTEMS SHALL BE SUFFICIENT TO MEET THE PEAK HOT WATER DEMANDS THROUGH THE RETAIL FOOD ESTABLISHMENT. HOT WATER WAS OBSERVED AT ONE OF THREE PREP HANDSINKS AND AT THE 3-COMP WAREWASHING SINK; ALL OTHER SINKS LISTED WERE NOT MAINTAINED WITH HOT RUNNING WATER. MUST CORRECT AND MAINTAIN.
