OBSERVED AN OPEN CONTAINER OF SALAD ALONG THE STUDENT SERVICE LINE WITHOUT A SNEEZEGUARD. MANAGER STATED THAT SALAD IS SELF-SERVICE. MANAGEMENT INSTRUCTED TO REMOVE THE SALAD FROM THE SERVICE LINE OR PROVIDE A LID OR PLASTIC COVERING OVER INDIVIDUAL SALAD PORTIONS. MANAGEMENT REMOVED THE SALAD FROM THE LINE AND WILL SERVE IT IN INDIVIDUAL COVERED PORTIONS. SERIOUS VIOLATION 7-38-005A.
