INSTRUCTED TO RELOCATE ALL FOOD ITEMS IN THE FREEZER/REFRIGERATION UNIT BEFORE DEFROSTING UNITS. FROZEN BAGS IN CONTACT WITH DRIPPAGE WERE CLEANED AND RELOCATED TO WALK-IN FREEZER. INTERIOR TEMPERATURE OF THE REACH-IN FREEZER WAS 8F AFTER DEFROST MODE WAS FINISHED.

Variance required before conducting specialized food processes.
Submit application to CDPH; Include HACCP plan; Await approval before starting; Maintain all required records.
