Observed potentially hazardous foods on shelf above steamtable case and inside steamtable unit at improper temperature. Found Salmon 20lbs at 77.7F, Pork 30lbs at 55.7 to 94.4F, chicken 30lbs at 61.3F to 134.2F, Vegeatbles 10lbs at 111.9F and soup 40lbs at 122.0F. Instructed manager that all potentially hazardous foods must be stored cold at 40F or below and hot at 140F or higher. Manager voluntarily discarded and denatured at products value $200, 130lbs. Critical citation issued 7-38-005(A).
