Informed manager that once items are prepared and stored for more than 12 hours must provide dates and labels. Instructed manager to provide dates and labels. Must maintain at all times.
Improper methods result in slow cooling that allows bacterial growth.
Approved cooling methods must be used.
Use shallow pans, ice baths, rapid chill units, ice wands; Cut large items into smaller portions; Stir frequently; Leave uncovered during cooling.

Observed hand sanitizer unit above exposed hand sink between 3 comp sink and dish machine. Informed manager to remove to ensure proper hand-washing at all times. Maintain at all times. Observed interior surface of freezer unit located between prep line and cook line broken and cracked. Also observed freezer gaskets broken and in poor repair. Instructed manager to repair and/or replace freezer unit. Maintain it all times. Observed raw wood shelving in liquor storage room in basement dry storage area. Informed the manager that all surfaces must be smooth and easily cleanable. Instructed manager to seal surface and maintained at all times.
