FOOD PROTECTED DURING STORAGE, PREPARATION, DISPLAY, SERVICE AND TRANSPORTATION - Comments: FOOD NOT PROTECTED FROM CONTAMINATION DURING STORAGE: OBSERVED CONDENSATION DRIPPING ONTO AN OPEN CONTAINER OF SMOKED PORK AND AN OPEN CONTAINER OF COOKED POTATOES IN THE 2-DOOR REFRIGERATOR IN THE SIDE STORAGE AREA. FOOD CONTAINERS WERE COVERED WITH A PIECE OF WAX PAPER THAT WAS NOT PROTECTING THE FOOD, CONDENSATION DROPLETS OBSERVED DIRECTLY ON THE FOOD. FOOD ITEMS WERE VOLUNTARILY DISCARDED. INSTRUCTED TO REPAIR REFRIGERATOR TO CONTAIN THE CONDENSATION AND PROPERLY PROTECT FOOD ITEMS AT ALL TIMES. OBSERVED BLACK AND BROWN BUILDUP ON THE INTERIOR CONTACT SURFACE OF THE ICE MACHINE IN THE UPPER COMPARTMENT. THE WATER LINE THAT RUNS TO THE WATER WELL IN THE UPPER COMPARTMENT WAS COVERED IN A BLACK MOLD LIKE SUBSTANCE AND BROWN AND BLACK BUILDUP ALONG THE OUTER LININGS OF THE ICE TRAY. MACHINE WAS TURNED OFF AND THE REMAINING ICE WAS BURNED. INSTRUCTED TO USE BAGGED ICE ON PREMISES UNTIL THE INTERIOR SURFACE OFHE ICE MACHINE IS DETAIL CLEANED AND SANITIZED.
