Contaminated cloths spread bacteria across multiple surfaces.

Wiping cloths must be properly sanitized and stored.

Store in sanitizer between uses (200ppm quat or 50-100ppm chlorine); Separate cloths for food and non-food surfaces; Test sanitizer concentration.

PLUMBING INSTALLED; PROPER BACKFLOW DEVICES - Comments: OBSERVED THE ONLY HAND SINK IN THE FOOD PREP/DISH AREA TO BE BLOCKED WITH A NEW OVEN AND UNACCESSIBLE FOR USE. ALSO, OBSERVED EMPLOYEE WASHING THEIR HANDS AT THE THREE-COMPARTMENT SINK DUE TO THE HAND SINK BEING BLOCKED. THE OWNER AND EMPLOYEES REMOVED THE UNUSED OVEN IN FRONT OF THE HAND SINK DURING THE INSPECTION TO CORRECT THE VIOLATION. PRIORITY VIOLATION 7-38-030(C) CITATION ISSUED.
