POTENTIALLY HAZARDOUS FOOD PROPERLY THAWED - Comments: Thawing frozen food for further processing shall be accomplished by storage in a refrigerator at 40?F or less, or by other approved method. 4 POUNDS OF FROZEN GROUND TURKEY WERE LEFT IN THE EMPTY EXPOSED HAND SINK TO THAW OUT AT ROOM TEMPERATURE. PRODUCT WAS STILL BELOW 40 F AND WAS MOVED TO CONTAINER AND PLACED UNDER COLD RUNNING WATER.

Improper thawing allows surface bacteria to multiply while interior remains frozen.

Time/temperature control foods must be thawed safely.
Specific Requirements
