Instructed manager to repair and maintain at all times. Observed no stoppers at 3 compartment sink. Instructed manager to provide. Maintain at all times. Observed rust and chipped paint on wire shelving racks in meat and sea food walk in coolers. Informed manager that all surfaces must be smooth and easily cleanable. Instructed manager to seal and/or replace with food grade surface. Observed drop in cold plate at both ice bins in bar, in contact with ice for public consumption. Informed manager that drop-in cold plates, drain lines, carbonators, tubing, etc. are not acceptable in ice bins (cold plates are to be built integrally with the ice bin). Instructed to install food grade grade surface/barrier to keep ice from consumption separate, from drop in cold plate, drain lines, etc. Maintain at all times.
