WATER SOURCE: SAFE, HOT & COLD UNDER CITY PRESSURE - Comments: NO HOT RUNNING WATER AT SINKS DURING INSPECTION. MANAGER STATED AT THE BEGINNING OF THE INSPECTION THAT HIS WATER RESERVE STORAGE TANK BURST DURING LUNCH AND THAT PLUMBERS WERE ON SITE REPAIRING TANK. THE HOT WATER TANK WAS STILL WORKING BUT WAS DISCCONNECTED FROM THE STORAGE TANK FOR REPAIR. INSTRUCTED MANAGER THAT ALL OPERATION MUST CEASE UNTIL RECONNECTED AND HOT RUNNING WATER RESTORED AT ALL SINKS AND DISHMACHINE.
Contaminated water spreads waterborne diseases. Insufficient hot water prevents proper sanitization.
Potable water supply must be adequate, protected, and properly heated.
Water from approved public system; Sufficient pressure for all operations; Hot water minimum 120°F at fixtures, 180°F for high-temp dishwashers; Backflow prevention installed; No cross-connections.
