MANAGER COLLECTED 75 SHAKERS APPROXIMATELY 40LBS OF PARMESEAN CHEESE VALUED AT APPROXIMATELY $75 DISCARDED AND DENATURED CHEESE. INSTRUCTED TO WASH, RINSE AND SANITIZE ALL SHAKERS AND FILL WITH NEW CHEESE AND KEEP REFRIGERATED AND BROUGHT TO TABLE WHEN REQUESTED OR WITH PIZZA SERVICE. CRITICAL VIOLATION 7-38-005 (A)
