Instructed manager to call machine in for service and to not use machine until it is repaired. Instructed manager must use 3 comp sink to temporarily wash, rinse, and sanitize all items. Item tagged until repaired. Priority violation 7-38-025.
Dirty equipment harbors and spreads pathogens, causing cross-contamination and illness.
All food contact surfaces must be properly cleaned and sanitized.

Instructed manager that all TCS foods must be held at or below 41 degrees at all times. Manager voluntarily discarded all out of temperature TCS foods. Priority violation 7-38-005. Discarded 390lbs of rice with a value of $520.
Temperatures below 135°F allow bacteria to multiply, especially spore-formers that survive cooking.

Handsink in basement near prep area has a leak from below. 3 compartment sink in basement has leak from below. Sink next to dish machine hs leak from below. Observed leak from backflow prevention device attached to dish machine. Contact a plumber to investigate and repair all sources of leaks mentioned above.
