INSTRUCTED: ALL COLD TCS FOODS MUST BE HELD IN A REFRIGERATION UNIT AT 41F OR BELOW AT ALL TIMES. MANAGER DISCARDED AND DENATURED SAID TCS FOODS DURING THE INSPECTION. PRIORITY VIOLATION.
