AT THE TIME OF THE INSPECTION ABOUT 3 LBS OF COOKED TURKEY BURGERS WERE BEING HELD IN A HOT HOLDING UNIT AT AN INADEQUATE HOT HOLDING TEMPERATURE OF 97F. INSTRUCTED TO DISCARD AND DENATURE SAID TCS FOODS AND ALWAYS MAINTAIN ALL HOT HOLDING TCS FOODS AT 135F OR ABOVE AT ALL TIMES. FOOD HANDLER DISCARDED SAID ITEM DURING THE INSPECTION.
